About Our Cooking & Patisserie Courses
Whether they are enthusiastic cooks or have a passion for baking, our hands on courses cover the how's and more importantly the why's of traditional french dishes, pastries and patisserie. On the Seasonal French Cooking course we visit markets and local producers on the morning excursions. In the afternoon, we use the sourced ingredients to prepare and cook a three course meal. We introduce a wide selection of techniques covering deboning poultry, filleting fish, bread making, braising, classic sauces & food presentation on a wide number of dishes depending entirely on the seasonal produce available.
On the French Patisserie course, we visit local patisseries to taste a selection of patisserie we'll be making during the course and discuss the techniques used to produce them. We cover as many essential techniques as possible, like croissants, French bread, puff pastry, chou pastry, creme patissiere, & mousses, so you can use them as a stepping stone to create your own pastries from your kitchen back home. I will pass on my tips and tricks that will guide you to success.
